Ingredients :

To Boil Rice-

Sharp Leaf Cassia - 02 nos,
Small cardamom- 02 no,
Big Cardamom - 02 Nos.
Water- 1 1/2 cup,
Salt-- according to taste
For Biryani-
Mix Vegetables- 2-3 cups,
Curd - 1/4 cup,
Milk- 1/4 cup,
Ghee- 03 tablespoons,
Green coriander leaves-02 tablespoons (chopped)
Onion-Onion - 01 big,
Tomato  01 medium,
Green cardamom- 04 nos,
Cinnamon wood- 02-inch piece,
Big Cardamom- 02 Nos.
Ginger - 1 1/2 inch piece,
Garam Masala- 1 1/2 teaspoon,
Turmeric Powder - 1/4 teaspoon,
Red Chilli Powder - 1/4 teaspoon,
Cashews - 1/4 cups,
Saffron - 1/2 teaspoon,
Salt- 01 teaspoon

Method:

For Mughlai Veg Biryani Recipe, first, wash the rice. After that, soak them in water for 20 minutes.
Boil the rice with salt, cinnamon leaf, small cardamom, large cardamom and cloves after frying. When rice gets cooked 2/3 part, turn off the gas and let the rice cool.

As the rice is cooling, heat the milk lightly and soak the saffron in it. After this, wash the vegetables (eg potatoes, cabbage, carrot, capsicum and beans) and take a similar cut. Cut onions and tomatoes separately too. Also, wash and Peel ginger.

Now heat the oil in a pan. When the oil is hot, add all the standing spices in it and fry it. After that pour ginger and fry a little. Then add onion and fry until golden.

After roasting onion, add tomatoes in the pan and mix it and mix it. Also, add powdered spices and fry until running, until the spices do not leave the oil.

Once the spices are well cooked, add curd to the pan and fry a little. After this, put vegetables in the pan and run and cover the Pan and cook till its melting. Vegetables will melt in 10-15 minutes. Keep them open and open between them. If necessary, then little water splash in it.

Once the vegetables are cooked, add rice and mix it well. After this, put cashew nuts in the Pan and add saffron milk and roll over it.

Now make the flame slowly and let it cook for 20-25 minutes. After cooking the rice, apply ghee and roasted onion in the pan and close the gas.

Note: Do not let the rice cook them completely when boiling. Take off only after being strict, then the biryani will be good.
